Recipes Pleeeeease!


I need some help. We're tired of having the same things for dinner over and over. Can any of you give me some yummy recipe ideas for dinners? If any of you know me well, you'll recall that I'm not the greatest cook nor do I enjoy spending time in the kitchen, so quick and easy things are much preferred. Please help me! (for my husband's sake) Here's one of our favorite recipes:

Crumbly Chicken Rice Casserole

12 oz. sour cream
1 can cream of chicken soup
3 c. cooked cut-up chicken
2 c. cooked rice
1 tube Ritz crackers
3/4 stick butter
2 T. poppy seed

1. Mix soup + sour cream together in bowl.
2. In separate bowl crush crackers, add poppy seed + butter.
3. In 9x13 pan layer 1/2 soup mix, 1/2 rice, all chicken. Then rest of rice, rest of soup mix. Top with cracker mix.
4. Cover with foil. Bake at 350 for 30 min.

Mmmm, that sounds yummy! Mike's mom has a great recipe for sweet and sour chicken. For the sauce, you'll need, a green pepper (cut up), pineapple (I use the tidbits), brown sugar, soy sauce, vingear, and cornstarch. Drain the juice from the pineappe, add 1/3 C vinegar, 1 T soy sauce and stir together. Then add 1/2 C brown sugar, and 1 T cornstarch. Heat that to a boil and let it boil for 1-2 minutes to thicken. Add the pineapple and green peppers. Heat through, but make sure the pepper and pineapple stay crisp. Serve over rice and chicken nuggets. Yes, chicken nuggets. It's so good and I don't have to cook something seperate for Ethan. I have a bunch more that are SUPER easy, email me your email address and I'll send them to you.

Here's a new one someone gave me that I haven't tried yet but it's easy!

au jus sandwiches

Pork or Beef Roast
2 onions
2 cups beef broth
1 package au jus seasoning

Put everything in the crockpot and cook for 4 hours on high.
Serve on hoagie rolls and dip in the leftover juices.

Here is one of my kids favorites.

4 chicken breast
1 can 16 oz. Tomato sauce
1 garlic clove (squished ya know)
1 small yellow onion
1 Tbs dried parsley
2 Cups Mozzarella cheese shredded
1 Tbs oil
Cook the onion and garlic with oil in hot pan (cook till golden brown)
Then mix the Tomato sauce,parsley all in the pan. Then take the chicken and place into baking pan cover all pieces with sauce then cover and cook for 35 min @ 350*. Check the chicken to make sure its cooked all the way. Then place the shredded cheese and cook again uncovered for 15 min or till cheese has brown spots all over.
Serve with noodles with olive oil and garlic. YUMMERS

To sum it up

To sum up the last 9 months... We went to Disney World and Universal in March with Rick’s family. It was a BLAST! Favorite part was Harry Potter world. Favorite ride was Rockin’ Roller coaster, or Hogwarts castle, or the Avatar ride.  Rick and I coached track March-May. It was fun but stressful. I like doing something for the community. I don’t like running a program w my husband and not enough adult help.   Kids finished school in May and we went on a camping trip Memorial weekend to St Joe State Park with our favorite people, Richardsons. Some other ward families came too. Marcellino’s and Smith’s.  Summer hit, Soleil got baptized, and Rick got a job offer to work for Cricut in Utah. Finally a job closer to family! We spent three very stressful weeks prepping our house for sale and then took off to Utah driving both our cars on July 13th.  The following week we vacationed in Lake Powell with my family. 2019 is my year to Be Prepared

Last year I decided to make a goal that involved one phrase, no guilt. That phrase stuck in my mind all year long, and guided me through a lot of situations. I found by the end of the year, that I really had changed because of those two words. In all the years past that I have set goals, I have set very specific reachable things. I always find that a few months into the year my motivation drops off and I don’t follow through with the goal. By the end of the year I either feel disappointed in myself, or I can’t even remember what my goal was to begin with. Last year was different in a very good way. So I’ve decided to do the same thing this year. After pondering and praying about what my goal should be this year, I came up with the phrase be prepared. There are so many ways to be prepared in life, spiritually, physically, temporarily, etc. I find that a lot of my stress on a daily basis could be remedied if I had only spent a little time before hand to prepare for that moment for that s...

Golf date

We went on a group date Friday night with our best friends here in St Louis, Wilson’s and Richardson’s. We went to a new place in Chesterfield called Top Golf. We ate yummy food and visited while we hit golf balls off a platform. It was the first time I had ever hit golf balls in a real way, aside from miniature golf. It was harder than it looks. Everyone had fun and I came home sore.
